Soup and Salads
 
 
Absolutely Phabulous Salad - East Texas Parrothead - a/k/a Terry Mathews
 
Lettuce (Romaine works well)
Anything phresh from your garden/produce/market
Lowry's Garlic Salt (no substitutions)
Wesson Oil (no substitutions) 
Red Wine Vinegar
Cracked black pepper
Croutons (optional)
Toss lettuce and vegetables.  Drizzle oil over salad just to coat - - do not use too much.  Toss.  Dust top of salad with Lowry's Garlic Salt.  Should look like it snowed on top.  
Toss again.  Liberally sprinkle salad with vinegar.  Toss again.  Add cracked black pepper to taste.  Because of the way you mix the dressing, it does not separate at the bottom.  Guaranteed. 
 
 
Cheese Soup - Spring Parrot - a/k/a Molly Van Metre
 
1/2 c raw carrots - chopped
1/2 c celery - chopped
1/2 c onion - chopped
1/2 cup green pepper - chopped
5 T margarine or butter
6 T phlour
salt
pepper
4 c chicken broth
3 c lightly packed cheddar or American cheese - grated
2 c whole milk
Put vegetables in soup pot.  Cook carrots, celery, onion, and green pepper in margarine or butter until tender. Thicken with flour mixed with a small amount of water.  Add salt and pepper to taste.  Cook slowly and add chicken broth.  Add cheese, stirring constantly until cheese melts.  Add milk.  Simmer until done.
